I’ve owned and used a lot of kitchen knives over the years, but this SEIDO chef’s knife is on another level.
From the moment you pick it up, you can tell it’s crafted with intention. The balance is nearly perfect — it feels substantial without being heavy, and the weight distribution makes prep work almost effortless. The handle fits naturally in your hand, giving you excellent control whether you’re doing fine detail work or powering through tougher ingredients.
The blade is where this knife truly shines. It arrived razor-sharp right out of the box and glides through everything — onions, tomatoes, herbs, thick cuts of meat — with clean, precise cuts. No crushing, no tearing, just smooth slices. It holds its edge remarkably well, even after heavy weekly use.

I bought a set of knives after using on of them about 4 times the cladding came off. Had I not seen it, it would have ended up in my food. Customer service states it's a defect and is not covered under the warranty. Since I cannot be sure the cladding will hold on the other knives they whole set cannot be trusted.

A short time after purchase one of the knives from the set developed a crack the entire length of the handle. Seido did not honor the warranty. The knives were well cared for and never in the dishwasher. Not only do they not stand behind their knives they do not honor their own warranty. DO NOT BUY THESE KNIVES

Frustrating and somewhat surprising customer service interaction. I see from other reviews that my experience isn't unique, but it's slightly different in that the defect in my knife is a loose/rattling handle.
When I wrote to report it, I got the story about how the 30 day window (also unrealistic for me as it was a Christmas present) had passed, and therefore they couldn't perform an exchange. What was odd, however, was that they referenced "small chips in the cutting edge" and had determined that they were "normal wear and tear" even though I hadn't mentioned anything about the blade. Which is fine (the blade), incidentally. I even included a video showing the rattling handle. It made me think that this is a common complaint and that they have a negative response at the ready.
When I corrected them, I was told that this STILL didn't qualify for the "lifetime warranty" as they couldn't determine definitively whether a loose handle was a manufacturing defect, even though it's unclear what else it could possibly be. So I guess I'm stuck with it. Strange customer service choice I thought. I'll keep the knife as I still like it (hence 2 stars instead of 1), but I wouldn't recommend them. [Edit, post-response: I see, so it's a Lifetime Warranty, as long as the issue is reported within 30 days. That clears it up. ??]

So I want to give almost a 3/4 stars. But also 5. Reason being we ordered a knife and cuts like butter. But the handle was loose. They were so fast to respond and send us a new knife. Customer service was amazing! But my husband ordered another knife and the handle is very loose on this one. I’m not sure what is with this continued issue. But I hope it’s resolved because we do really like the knife itself and would like to order more but not if this is an ongoing issue

I bought the 8 piece chef set for a Christmas present. After Christmas we were using them and when cleaning I noticed a defect at the cutting edge of one of the knives. I contacted them and was informed that I had 30 days from day of delivery for returns even if it was a factory defect. This is unacceptable of any company to limit the warranty starting from delivery especially at Christmas. Seido should take care of factory defects without hassle.

I purchased a Seido knife set as a Christmas gift — a $350 set. My wife didn’t like the style, so I returned it. The box was unopened and still sealed in cellophane, exactly as received.
Even though the product was completely untouched, I was charged a 20% restocking fee, costing me $70 just to return a brand-new item. I understand policies exist, but charging a steep fee on a sealed, resellable product feels excessive and unfair.
What made it worse is that I ended up spending just a little more on a higher-quality knife set with better reviews and free returns from another brand. That made this experience feel like a penalty for simply trying Seido first.
The knives may be fine, but the return policy left a bad impression. I won’t purchase from Seido again.

I love my knives, they are sharp enough to shave with. I purchased the tan canvas/leather roll up bag for them and was disappointed. For $150 that bag should have real leather, not faux leather. Be better.

We received a set of Seido knives as a gift. 10 months and a handful of uses later one of them snapped in half about an inch from the handle, so the thicker area of the knife. This happened while gently tapping the knife on the edge of a plastic bowl to get a slice of cucumber off. The cucumber stayed on, the knife broke. I was told they have a 30 day limited warranty and this isn’t covered. I was also told they design their knives for durability. Absolutely comical. After this response I reviewed other consumer reviews only to find out this is a common problem and that these purported Japanese knives are a sham. Unless you find them at a garage sale for pricing equivalent to disposable knives you’d do well to avoid this manufacturer at all costs. They will break, the company will not stand behind their cheap fake product, and you will be out your money. Ignore the canned response about how much they are sorry to hear about this. They are not. They know they are making a cheap product, thus the meager 30 day warranty. They know they have no intention of standing behind their product and hide behind CYA verbiage. My knife broke because it is a cheap defective piece of junk, that’s why it broke, not because of improper use. The wise consumer will see right through their empty disingenuous response and stay away. And advise everyone they know to stay away.

received as a gift. knife broke after 2 use. found out that this was a cheap chinese knife that was rebranded and sold at premium knife by a canadian "entrepreneur" Costantino “Tino” Delnero. They are deceptive in branding that makes it look like they're japanese knife on the website, but actually "Japanese influenced knife" made in china branded on their box. Their whole website is written by AI, and their responses to bad reviews are also written by AI. Live chat never responded to our message.

I did not realize that I'd have to pay the US duty and the knife would not arrive until after Christmas. I ordered at the beginning of November and received the knife Jan 5. Why do I have to pay a US custom when I am in Canada. In the meantime, I have consulted a knife store in my neighborhood (which I should have done in the first place) I am no longer sure that these knives are the best. Never again would I go through this.

Customer service is AWFUL! They made a mistake with shipping and would not help to correct it. I had to pay to get it fixed, too long of a story to go thru. I don’t even care about the knife at this point I will not buy from this company again. Also just know, they’re made in china, Not Japan.

I have used multiple knives over the past 50 + years. These are the first knives I have owned that remain as sharp as advertised. They are very thin yet extremely strong. I liked them so much I purchased additional knives beyong my initial purchase of 7 knives. I have been using them daily for a couple of months now with a quick "touch up" every 2 - 3 weeks with a diamond stone. I truly expect to use these knives for the next 20 years.
