Chilli powder is a staple of every spice cabinet. But as every cook knows the heat it confers, although convenient, is a pale shadow of the subtle and complex mix of flavours you get from the real thing. You see, it’s not simply a matter of raw heat. Cut into a fresh scotch bonnet and you immediately get that signature mouth-watering hit of citrus coupled with notes of soft fruit sweetness and low rumbling heat; flavours that simply can’t be replicated by a dry powder. Through a process I have created in my own kitchen, I have managed to replicate my Nan’s recipe, made for generations in my family. She began making it in Guyana where the scotch bonnets grew in her garden, and brought it here to the UK when she came over many moons ago. Gunpowda never went further than our own home however. Surprising punch from just a pinch

Surprising punch from just a pinch. Closest thing to using actual scotch bonnets that I've found. Retains the complexity of the fresh ingredient as well as the heat. Recommend if you enjoy spice.

Mouthwatering

The first thing that hits you is the smell. It automatically makes your mouth water. It adds a dimension to the food that enhances the flavour. As a travel condiment it is invaluable and just a sprinkle makes something ordinary absolutely extraordinary.
