Fry the Edwards lightly on both sides, add 3 oz. Espresso, allow to simmer both sides until coffee thickens, plate the ham slice and pour the thickened coffee over. One of my favorite flavors in life.

I grew up in NC and remember country ham from my grandparents farm. This ham reminds me of home. Red eye gravy and grits go get with it. Use it every Christmas for a family breakfast.
